New Pasta Dish!

This is one of my new favorite Pinterest finds!

Orecchiette Peas & Pancetta in Cream Sauce

  • 1 (1-pound) package DeLallo Orecchiette (I just used HT brand)
  • 1 tablespoon Delallo Extra Virgin Olive Oil (again, any kind works)
  • 1/2 pound DeLallo Pancetta, cut 1/4-inch thick, then cubed into small pieces (I will note that I used the precut Pancetta from the grocery store and I wouldn't do it again. The pieces ended up too small once cooked.)
  • 1 clove garlic, finely minced
  • 4 tablespoons butter
  • 1 small white onion, finely diced
  • 2 tablespoons chicken stock or water
  • Salt and pepper
  • 1 cup light cream
  • 2 cups frozen peas, thawed
  • 1/4 cup grated Parmigiano Reggiano Cheese

Bring a large pot of water to a boil, add salt, then add the pasta. Cook until al dente. Drain in a colander.
Meanwhile, in a small pan heat the olive oil and garlic, add the pancetta when hot and cook until golden brown. Set aside in a dish.

In the same pan, melt the butter over medium heat, until foaming. Add the onions and cook until soft. Add in the chicken stock or water and season with salt and pepper to taste. Stir in the pancetta and cook for about 2 minutes. Add in the cream; bring to a low simmer and cook 5 minutes until slightly thickened.

Pour the cooked pasta into the saucepan. Mix well to coat the pasta evenly with sauce. Lastly, stir in both the peas and cheese. Transfer to a warm serving bowl to serve. If desired, finish with grated cheese on top.
Serves 4

I made this for just me and Dave, it was plenty!! We had so many leftovers.  It tasted great the next day (and day after that) as well. Have you found any good, new recipes from Pinterst lately?

I feel like my Pinterest is just one big wish list!  Or to-do list!

I'm trying to break down my needs vs wants and dreams vs reality.  But I tend to get so overwhelmed when I want things for the house/yard, clothing/accessories, and trips.  So I've decided to make lists and look at everything at once, then break it down in an organized manor.

So this post is going to be about things I am coveting for our home.

And of course I don't "need" any of these....they are purely wants!

Black Thumb

I am really no garden expert...and I typically avoid it and let my hubby handle it.  He took care of planning all of the landscaping, knowing that all I wanted were lots of hydrangeas.

However, pulling bushes out of my friends' yard on Sunday kind of inspired me.  Last year I did do two potted plants- one for the back and one in the front. But neither really flourished or survived too long. So I am going to try again! I'm going to head to my favorite market and hope to find some bright flowers that will survive the summer with me!

Here are a few images from Google that I liked (click for the link):
